DIRECTORY OF RESTAURANTS SERVING AFRICAN CUISINE
In the summer of 1989 I began the compliation of a directory of restaurants which serve African cuisine but which are located outside the continent of Africa. It is hoped that such a directory will be found useful to a number of different audiences, among which are the following: diners wishing to become acquainted with African cuisines and cultures; students of African cultures, societies, institutions, and languages; and Africans and Africanists transplanted to new environments who wish to maintain culinary links with past experience.
No further source material being directly available, I am posting the directory as compiled as of this date. The directory comes in five parts, respectively containing (apart from each header) 261, 1558, 2640, 226, and 1498 lines. It is unformatted, with a line-record-length of 72. You may want to reformat it before printing according to your own requirements.
Because of the nature of the source material, there remains much uncertainty concerning the cuisines of (and other information about) the restaurants listed. The directory identifies 223 restaurants as serving African cuisine, 119 probably serving African cuisine, and 690 possibly serving African cuisine. Readers are requested and encouraged to contact listed restaurants in their local areas for missing and/or additional information (see the section "Call for Additional Information" in the first part). Please send your electronic contributions either to me directly or to the network, as you see fit, for inclusion in the next edition of the directory. Thank you.

INTRODUCTION
This directory is an attempt to document restaurants which serve African cuisine but are located outside the continent of Africa. The many restaurants and local dining establishments in Africa itself have purposely been excluded from the compilation, for the intention in the creation of the directory has been to provide individuals outside of Africa with a guide to locations where the culinary aspects of many African cultures could be found and enjoyed.
The directory is aimed at a number of different audiences, whose interest in and affection for the cuisines and cultures of the continent range from the undeveloped to the innate. It is hoped that this work will be found especially useful to the following: diners wishing to become acquainted with African cuisines and cultures; students of African cultures, societies, institutions, and languages; and Africans and Africanists transplanted to new environments who wish to maintain culinary links with past experience.
The inclusion of restaurants in this directory has been entirely dependent on the discovery of information pertinent to their cuisines. Such information might range from the mere name of a restaurant to a wealth of details describing an establishment's offerings. The directory has consequently been divided into two major sections. The first section, "Restaurants Serving African Cuisine" contains entries for restaurants which are definitely known to serve African cuisine as well as entries for restaurants which very probably do the same, judging from their names. The second section, "Restaurants Possibly Serving African Cuisine", contains entries for restaurants a) whose names suggest that they may serve African cuisine, b) which are known to serve a neighboring cuisine whose offerings may overlap with an African cuisine, or c) whose names suggest that they may serve a neighboring cuisine whose offerings may overlap with an African cuisine.
In general, a restaurant has been given the benefit of the doubt and included in the directory with "possible" status where there has been no more than a mere suggestion of African cuisine in the establishment's name. Experience gained during the compilation, however, revealed that North American restaurants whose names include any of the following words are unlikely to serve African cuisine: Bamboo, Calabash, Crocodile, Elephant, Falafel, Flamingo, Giraffe, Golden, Jungle, Kabob, Kapok, Palm, and Shish Kebab. Restaurants of this sort whose cuisines could not be determined have consequently been excluded from the directory (contrariwise, many such restaurants with the words Oasis or Safari in their names have been listed). With respect to cuisine, restaurants whose cuisines are described as simply Caribbean or International have also been omitted. It is hoped that new information may be brought to light which will settle current uncertainties for the benefit of future editions of the directory (see the section "Call for Additional Information" below).
Cited restaurants are arranged by continent, nation, and city. Individual entries contain as much of the following information as could be uncovered by the compiler: name of restaurant, street address, locational reference, postal code, telephone, hours, cuisines offered, banquet facilities (if any), catering services (if any), live entertainment (if any; variety, and hours), reservations (if mentioned in any way in the advertising of the restaurant), recently published reviews, and sources of information. An appendix lists any recent changes in this information which came to light during the course of research. A second appendix provides a list of the sources of information consulted during the compilation.
SOURCES
Information for the directory was drawn from a number of different sources: telephone directories, regional periodicals, periodicals emphasizing travel and food, travel and restaurant guides, databases, postal code directories, and contributions from individuals. Of these sources, telephone directories proved to be the most generally useful, being classificatory in coverage, comprehensive in scope, and broadly accessible in libraries in both paper and microfiche forms. Yellow pages were most frequently consulted, while white pages were employed when yellow pages were unavailable for purposes of confirmation of data drawn from other sources.
Regional periodicals generally devote coverage to local dining and often include an annual rating of area restaurants. Citations of portions of articles from such periodicals which include reports of dining experiences at individual restaurants are included in directory entries. Those periodicals actually available to and consulted by the compiler are listed on the source line of the entries. In all cases, these portions have been identified with the name of the restaurant regardless of the name of the entire article, following the practice of the Magazine Index database.
Periodicals devoted to travel and/or food, or which contain regular departments on these subjects, occasionally include restaurants serving African cuisine in review articles. Again, articles containing such reviews have been included in the directory but identified with the name of the restaurant regardless of the name of the entire article.
Travel guides generally pay little attention to restaurants serving African cuisine, having been written from and for a Western point of view. At most, one or two--if any at all--such restaurants may be expected to have been cited in the guide to an individual nation. Where listings appear, however, they are generally more informative than advertisements found in telephone directories. Restaurant guides are more uncommon and tend to focus on the establishments of a single city, often helpfully summarizing opinions contributed by individual diners.
Three databases proved helpful in the compilation of the directory. Magazine Index, a publication of Information Access Company, was used to identify restaurant reviews appearing in periodicals. The Index was used in forms supplied for use with microform readers ("InfoTrac") and CD-ROM computer retrieval. National Newspaper Index, also a publication of Information Access Company, was used with a microform reader to identify restaurant reviews appearing in American newspapers with national distribution. SPIRES, the Stanford Public Information Retrieval System, an online computer database whose identical subfiles RESTAURANT and RESTAURANTS contain restaurant reviews, was also consulted.
Postal code directories of Canada and the United States were used to fill out postal addresses of restaurants identified in other sources.
Finally, a number of individuals using the USENET computer network kindly responded to a request for information on restaurants serving African cuisine, sometimes including personal experiences, repeating menus, or verifying information unclear to the compiler. These individuals, to whom the compiler's thanks are extended, are listed with their electronic addresses.
CALL FOR ADDITIONAL INFORMATION
In spite of the number of sources consulted in the course of the compilation of the directory, a great deal of information remains yet to be gathered. Information concerning the restaurants of many great cities of the world was altogether unavailable to the compiler. It is likely that restaurant names have disguised the African cuisine of a number of establishments for which information was otherwise available, consequently causing them to be overlooked. Information for many entries is incomplete, but the cost of directly contacting such restaurants has prevented such missing information from being included.
For these reasons, a call is being issued for contributions of additional information. The greatest priority in this task is to reduce the number of tentative listings in both sections of the directory via an unequivocal identification of their cuisines. In this task it is important to determine whether restaurants serving neighboring cuisines such as Mediterranean, Middle Eastern, and Arab also include distinctly African offerings to an extent which would merit inclusion in the directory.
Listings of restaurants serving African cuisine but not included in the directory are most certainly desired. Information missing from the entries of current listings is also requested. Finally, corrections of errors appearing in the directory are also requested. Please send contributions electronically to the compiler or by post to the Center for Applied Research in African Languages at the addresses given below. Contributors will be listed in the next edition of the directory unless instructions to the contrary are received.

CENTER FOR APPLIED RESEARCH IN AFRICAN LANGUAGES
The Center for Applied Research in African Languages, Inc., is an independent nonprofit organization established to assist instruction in African languages and research in African linguistics, and thereby to contribute to the understanding and appreciation of African cultures and societies in general. Apart from this directory, the Center's most recent project was the preparation of a series of MS-DOS African- language reference fonts for screen, dot-matrix printer, and laser printer, each set containing about 2200 characters. Under current development is software for use in research in African linguistic geography.
The operating income and assets of the Center derive exclusively from donations; in turn, its assistance and products are made available without charge, except for the cost of duplication and transmission, to onprofit organizations and individuals for noncommercial use.
